I have read with interest about the jobs available on the gas rigs. I am eager to obtain a job as a qualified chef on a gas/oil rig. I am relocating to Western Australia at the end of next month.
As you will see from my resume, I have a great deal of experience in the hospitality industry, and I wish to further my skills by moving away from the environment I am used to and getting a great experience. The Wharf Shed Caf� is a busy A la carte establishment, doing around 300 meals per service. I worked there as a trainee for 3 months, doing larder and general preperation work.
Paritz French Pattisserie (May, 2003 - July, 2003) Geelong
Waitressing / Assisting in Kitchen
Paritz French Patitisserie is a small caf�, which served coffees and French cakes. I assisted in baking, as well as making coffees and serving customers.
Cats Bar & Restaurant (June, 2003 - September, 2005) Geelong
Cats Bar & Restaurant was a busy A la carte restaurant located in central Geelong. I started as a 1st year apprentice and continued to 3rd year apprentice. My duties included running larder; during service pans, or grill; some ordering; prep work; serving customers; and running some restaurant services. This establishment seated 140 people, and would serve about 200 people on a busy night.
Grand Pacific Hotel (September, 2005 - November, 2006) Lorne

The Grand Pacific Hotel is a seasonal A la carte hotel located on the coast of Victoria in Lorne. While the winter mothers were quiet, the summer months, were typically 350 meals per service. I was still an apprentice at this stage, but still undertook the responsibilities of 2nd chef. I dealt with responsibilities such as ordering, planning specials menus, organising staff as well as running larder and pans sections. During service I would alternate between all sections, pans, fryers, larder or grill. We did large functions of up to 205 people, which I would help organise.
Grand Hotel (November, 2006 - January, 2008) Portarlington

I completed my apprenticeship at the Grand Hotel. My duties were running the kitchen on the Head chef�s days off, helping with ordering, running pans section, as well as looking over larder. I was in charge of training apprentices and helping to make sure the day to day running of the kitchen was smooth.
Atrium Bar & Caf� (January, 2008 - April, 2008) Queenscliff
I worked at this 140 seat seasonal A la carte caf� as the head chef for four months. I planned my own menus, did functions, and handled the day to day running of the kitchen. I assisted with the start up of this caf� for the owner�s first venture into hospitality.
Buckleys Gaming Center (April, 2008 - Current) Geelong

I was working at this busy establishment gaining further skills working as a waitress to begin with before taking on the role as 3rd chef. On a busy day, we will do up to 700 meals, not including functions. I have been doing pans, fryers & grill in the kitchen, and during waitressing I have been setting up for functions, working functions, using the till, making coffes and general customer service.
